Beetroot Pachadi with Fresh Yogurt

Pachadi is an absolutely delicious recipe for beets and yogurt.  This is another dish that Prabha has brought to us from her native Kerala.

Ingredients:

  • Julienne or grated beets..................1 cup
  • Julienne or grated cucumber...........1/4 cup
  • Fresh Plain Yogurt...........................3 tbs
  • Ghee or olive oil.............................1 to 2 tbs
  • Cumin, crushed.............................1/4 tsp
  • Green, chilies, chopped.................1/4 tsp
  • Ginger, chopped............................1/4 tsp
  • Curry leaves...................................1 sprig
  • Turmeric powder............................one pinch
  • Cooling Soma salt.......................................1/4 tsp or to your taste


Method

  1. Heat the ghee or oil in a medium frying pan. Add Cumin seeds, chilies, ginger, curry leaves and turmeric.
  2. Saute on medium flame until things begin to brown. Add the beet and 2 tbs of water, mix, cover and steam until the beets had cooked through, about 5 minutes.
  3. Add the cucumber and mix, turn off the heat.
  4. Mix the yogurt with a fork to smooth. Add the yogurt, salt and mix.
