Healthy Muffin Recipe

Everyone likes a snack but how to make it healthy?  Here is a great Muffin recipe that supports digestion and opens the channels.

Ingredients:

  • 1/4 cup Quinoa Flour
  • 1/4 cup Rice Flour
  • 1/4 cup Arrow Root
  • 1/4 cup Barley Flour
  • 1 Cinnamon Stick
  • 4 Crushed Green Cardamon
  • 1/4 cup of Raisins
  • 1 cup of fresh (not sour) Yogurt
  • 1 pinch of baking soda

Instructions:

Preheat the oven to 350 degrees.

Lightly toast the cinnamon stick and cardamom pods.  Grind them to a fine powder. Mix the spices, flours and baking soda.  Stir in the yogurt and raisins and make into a dough.  Pour the dough in a Muffin pan and bake until lightly brown.  Check with fork or knife to insure dough is completely cooked.  Cool and enjoy.
