Simple Flame Grilled Chapati or Deep Dried Poori

Chapati is unleavened bread that can be grilled or deep fried.  It's very easy to make and delicious.

Ingredients:

  • Chapatti Flour ……………….…….2 cups
  • Cumin seeds …………………….1/2 tsp
  • Cooling Soma salt ………….....1/2 tsp or to taste
  • Ghee ……………………................2 tbs

If you are making Poori enough Sesame oil or Ghee to deep fry the Pooris.
Hint: use a small 4-5” deep pan to conserve oil.

Instructions:

In a large bowl place the flour, salt and cumin seeds. Mix with hand while slowly
adding warm water to make dough. Set aside.

For Poori:

  1. Heat oil well in a deep frying pan.
  2. Make small balls out of the dough, using a rolling pin make round thin pancake, wait until the oil is nice and hot.
  3. Add the poori to oil one by one, turn over and fry until light brown and remove, set it side ways in a bowl with paper towel to absorb the excess oil.

Chapati:

  1. Make about 10-12 larger balls out of the dough. Roll it out to thin round pancake.
  2. Heat a flat frying pan, quick heat the chapatti on both sides, about 5-6 seconds each sides. Place the chapatti grill over the medium flame.
  3. Move the heated chapatti over to the grill; adjust the flame/heat to grill the chapatti turning to cook both sides without burning.
  4. Move it over to the dish, brush it with a little ghee, and set aside,
  5. Serve warm.
