Poha (Rice Flakes)

Vaidya Mishra introduced me to this dish many years ago.  Poha are flakes of rice that have been steamed off the rice kernel.  This dish combines spice, vegetables and paneer to make a light and nutritious breakfast.  This is Prabha's rendition of one of Vaidya's favorites.

Ingredients:

  • Poha.............................................1 cup
  • Paneer cut....................................1/4 cup
  • Carrot ….......................................1/4 cup
  • Broccoli.........................................1/4 cup
  • Cashews pieces............................2 tbs
  • Raisins...........................................2 tbs
  • Almonds slices..............................2 tbs
  • Chopped ginger …........................1 tbs
  • Chopped curry leaves...................1 stem
  • cooling soma salt .…...............................1 tsp or to taste
  • Turmeric …...................................1 tsp
  • Cumin cracked ….........................1 tsp
  • Your spice mix.............................1/2 tsp
  • Lime..............................................2 pieces
  • Ghee............................................3 tbs
  • Chopped cilantro..........................2 tbs

Instructions:

  1. Rinse Poha with warm water in a colander and set aside.
  2. In large frying pan steam carrot and broccoli (or any hard vegetable you choose to use i.e. beans, cauliflower etc.) with a small amount of water, just enough for the veggies to wilt.
  3. When all the water is absorbed, move the veggies to the side. Add the ghee and heat, add paneer and fry for a few minutes.
  4. Add the ingredients 3 to 13 and fry together for about 5-7 minutes over medium heat. Add the Poha and toss to mix well with all the items.
  5. Garnish with cilantro.

Let stand for 5-10 minutes, squeeze some lime juice over it. Great for a breakfast with Indian chai.
