Yogurt Raita with Spices and Cucumber

Yogurt raita is a wonderful yogurt sauce with spices.  Prabha makes the best I've ever eaten.  You'll enjoy this one!

Ingredients

  • Yogurt Plain......................................................1 cup
  • Grated Carrot....................................................1 tbs
  • Chopped cucumber..........................................1/2 cup
  • Chopped cilantro.............................................1/4 cup
  • Curry leaf........................................................1 stem
  • Cumin seeds....................................................1/2 tsp
  • Ginger chopped...............................................2 tsp
  • Cilantro stem chopped....................................1 tsp
  • Ghee...............................................................1 tbs
  • Cooling Soma Salt.........................................1/2 tsp

Instructions:

  1. Mix yogurt with cucumber, carrot, salt and cilantro, set aside.
  2. Heat ghee in a small frying pan. add ginger, cilantro stems, curry leaves, crushed cumin seeds.
  3. Fry until things starts to turn brown, take it off the heat. let stand to cool for a few minutes, add to the yogurt and mix.
