Chicken Tikka with Yogurt Marinade

If you like chicken, you'll love this tasty dish.

Ingredients:

  • Boneless chicken thighs cut to small pieces....................1 lb
  • Tikka spice mix*…………………… .……………..............2 tsp
  • OR your spice mix………………………………......... …..2 tsp
  • Fresh yogurt.................................................................2-3 tbs
  • Fresh ginger chopped..................................................1/2 tsp
  • Fresh green chilies chopped........................................1/2 tsp (less if you like less spicy)
  • Fresh coriander leaves chopped.……...…………...........2 tbs.
  • Bay leaves ………………………………………............…2
  • Cooling Soma Salt ......................................................1/2 tsp or to your taste

Instructions:

  1. Mix all these items with chicken and keep in fridge for 2-3 hours or overnight.
  2. Heat a flat big nonstick frying pan.
  3. Add the whole mixture in to the pan, bring to a nice heat, cover and boil for 10 minutes.
  4. Lots of water will come out. Open the lid and continue cooking, turning  occasionally.
  5. Let all the water dry out. Depending on the chicken, if you used chicken with some fat, it will have enough oil left in the pan to brown the pieces. If not, add some olive oil and brown the chicken pieces.
  6. You may garnish with some chopped cilantro, mint leaves, parsley or basal.
